Summer Fruit & Cheese Dessert Plate

This refreshing fruit and cheese platter is often served in the Mediterranean after an evening as a complementary dessert. The hydrating fruit and balance of sweet honey with salty cheese are perfect for eating al fresco!

Mediterranean Baked Fish

A delightful Mediterranean Baked Fish is great any time of the year, and freshest during the summer when tomatoes are at their best. The vibrant flavors of the Mediterranean are showcased in this dish with a range of bright and light toppings that perfectly complement white fish. You will experience the tangy notes of olives, the zesty freshness of lemon, the briny burst of capers, and the juicy sweetness of tomatoes.

To ensure the highest quality, I recommend partnered with the your local fish market, to help you select either halibut or cod fish depending on availability and price point. I am grateful for my fish monger's commitment to sustainable fishing practices ensuring that I enjoy not only delicious flavors but also support the local community and marine conservation efforts.

Classic Greek Village Salad (Horiatiki)

You will love how simple and fresh this summer salad is!  The time to eat it is when tomatoes are in season.  In most regions, the soil is not warm enough to plant tomatoes outdoors until late spring and early summer.  Waiting for those tomatoes to ripen is well worth it for the juice they produce.

​

My favorite part is dipping a hearty grain bread into the tomato juice at the bottom of the bowl. This combination of tomato and cucumber juice with olive oil, feta cheese crumbs and oregano flakes is a classic representation of Greek summer flavors.

Greek Baked Vegetables

One of the most beautiful parts of the Mediterranean way of eating is that there are so many seasonal whole foods to choose from.  It's the easiest, healthiest, and best-tasting diet to follow on the planet.

 

Your choices include all the fiber-packed vegetables and fruits, nuts, flavors from healthy fats, herbs and spices, little to no red meat, clean protein from seafood, beans and legumes, some dairy, moderate amounts of organically raised poultry and eggs, and whole grains... and don't forget my favorites: the extra virgin olive oil, moderate consumption of red wine and dark chocolate!

Many of these ingredients are often promoted to decrease the risk of heart disease, depression, and dementia, according to the Harvard School of Public Health. 

​

This recipe for Greek Baked Vegetables (Briam or Tourlou we call it in Greek) came from my mother and grandmother and many Greek grandmothers before them.

​

Serve this warm dish that is full of flavor and fiber-packed vegetables, with a baked white fish, side salad, crusty loaf of bread and a bit of feta cheese.  Your entire house will be perfumed with the aroma of garlic, onion and parsley!
