A classic Greek village salad, or "Horiatiki," is a refreshing mix of ripe tomatoes, crisp cucumbers, bell peppers, red onions, and Kalamata olives, all crowned with a generous slab of creamy feta cheese. Drizzled with extra virgin olive oil and a dusting of dried oregano, this vibrant dish captures the essence of Greek summers with its simple, wholesome, and seasonal ingredients. Enjoying this salad transports you to a sun-drenched taverna by the sea, savoring the flavors of the Mediterranean.

Ingredients

  • 1-2 cucumber

  • 2-3 ripe tomatoes

  • a pinch of salt

  • olive oil

  • feta cheese

  • dried oregano

  • Optional additions: kalamata olives, red onion, green bell pepper

Preparation

Step 1


Rinse the cucumber and tomatoes. Remove the cucumber ends and peel the skin with a vegetable peeler, creating a striped effect. Rough chop the cucumber and tomato and toss in a bowl.


Step 2


Season with salt. Drizzle olive oil to coat the cucumber and tomato.


Step 3


Crumble feta cheese on top and toss everything together. Season with died oregano


Step 4


Set aside for 5-10 minutes to allow cucumbers and tomatoes to sweat and create a delicious juice mixture with the olive oil.


Optional additions: Include Kalamata olives, chopped red onion, and chopped green bell pepper.
